CREAM OF ASPARAGUS

Fresh green asparagus, with the spears
400gm
Grease 20ml
Unsalted butter 50gm
Onions, cut up
Potatoes, unpeel slash into cubes 200gm
Water 1 litre
Cream 20ml
Salt to tang
Pepper to tang
PROCESS
 Clean the asparagus and slice the spears in 1 1/2” pieces. Slash the rest of the asparagus into little pieces.
 In a broth pan, heat some grease. Presently add on semi the butter, onions, asparagus tails and potatoes. Bake for on 20 mins on a lessen heat. Add simmering water and bake for one more 15-20 mins till smooth.
 Add the cream and time with salt and pepper.
 Bake the asparagus spears till crispy. End with broth with the residual butter. Add the whole asparagus spears and dish up warm.
